My Go To Chocolate Cake Recipe – Fast and Easy!
I am a self taught baker. When I was little I would take recipes from my mother’s Martha Stewart magazines and make them. Then as an adult I started baking more and experimenting with recipes and even started a small business from my home. For about two years I went on a plant based diet and did not eat any meat or dairy and at first I thought, well I wont be able to bake without eggs, butter and milk so I will still have to use those items for baking.

I came across a Vegan Baker, Chloe Coscarelli, who won on Cupcake Wars against non Vegan Bakers. I thought, well if her cake won on the show it must be good. So I tried making her Vegan Chocolate Cake Cupcakes.
My Go To Chocolate Cake Recipe is So Easy!
The first thing I loved about it was that it was so easy to make, you mix the dry ingredients in one bowl and the wet in another then combine, pour it in your cupcake liners and bake. Most tradition cake recipes require that you cream the butter and sugar first and then add the eggs one at a time and then alternate the milk with the dry ingredients etc. This recipe is so stinking simple!
I Took One Bite but Didn’t Like It?!?!
Okay back to my first attempt. I took one bite but didn’t like it. What?! All I could taste was oil, I thought that maybe I put the wrong amount of oil in it since I was starting with half the recipe to just try it out first. So I tried the whole thing again. On the second round the oil taste was less but it was still all that I could taste. How could this be?!?! She won on Cupcakes Wars!! So before I threw out those cupcakes I gave one to my roommate and she said it was delicious. So I realized that I just have a sensitive palate to oil, it was me not the recipe.
I Wanted to Enjoy My Go To Chocolate Cake Recipe Too!
But I wanted to enjoy these cupcakes too so I tried making a small modification. I used Coconut Oil instead of Canola Oil and bam! No oil taste and I don’t even taste the coconut flavor from the Coconut oil either. Success!! And my family and friends love it too, Vegan or not. My mother, who is not Vegan, loves this chocolate cake recipe and prefers it over all others. She loves how moist it is. So even when I am making a cake for a client, whether Vegan or not, I use Chef Chloe’s recipe but with Coconut oil. This is the Coconut Oil I use.
